1 pie shell
2 cups sugar
1 Tablespoon corn meal
1 Tablespoon flour
Add:
4 large eggs
1 stick melted butter
1 20 ounce can drained crushed pineapple save ¼ cup of juice
1 cup chopped pecans
1½ cups coconut
1 teaspoon vanilla

Directions:
Directions:
Bake pie shell 7-9 minutes. Remove and cool. Combine sugar, corn meal, and flour. Beat in eggs one at a time. Add melted but cooled butter. Mix until well blended crushed drained pineapple, ¼ cup pineapple juice, chopped nuts, coconut, and vanilla.
Pour into pie shell and bake in preheated oven 350º for 50-60 minutes. Pie is done if slightly jiggles in center. Garnish top with shredded coconut around edges.
