Pie: PCP Pie (Pineapple, Coconut, Pecan) Recipe

1 pie shell
2 cups sugar
1 Tablespoon corn meal
1 Tablespoon flour
4 large eggs
1 stick melted butter
1 20 ounce can drained crushed pineapple save cup of juice
1 cup chopped pecans
1 cups coconut
1 teaspoon vanilla

Bake pie shell 7-9 minutes. Remove and cool. Combine sugar, corn meal, and flour. Beat in eggs one at a time. Add melted but cooled butter. Mix until well blended crushed drained pineapple, cup pineapple juice, chopped nuts, coconut, and vanilla.
Pour into pie shell and bake in preheated oven 350 for 50-60 minutes. Pie is done if slightly jiggles in center. Garnish top with shredded coconut around edges.
