Cake:
1 pkg of German Sweet Chocolate 4 ounces
½ cup boiling water
2 ¼ cups all purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup butter
2 cups sugar
4 egg yolks
1 teaspoon vanilla
1 cup buttermilk
4 egg whites stiffly beaten
Coconut-Pecan Frosting:
1 cup evaporated milk
1 cup sugar
3 egg yolks
½ cup butter
1 teaspoon Vanilla
1⅓ cup angel flake coconut
1 cup chopped pecans and halves.
Directions:
Directions:
Melt chocolate in boiling water, cool. Sift flour salt, and baking soda. Cream butter, sugar and egg yolks (beat in each egg yoke one at a time.) Blend in melted chocolate and vanilla. Blend in flour mixture alternately with buttermilk, beating after each addition. Fold in beaten egg whites. Pour in to 3 round cake pans with parchment paper lining each bottom of pan. Bake 350º for 30-35 minutes or until cake springs back when lightly pressed in the center. Cool in pans 15 minutes. Remove and cool on rack. Spread with Coconut-Pecan Frosting, between layers and on top of cake.
Coconut-Pecan Frosting directions:
Combine evaporated milk, sugar, egg yolks, butter and vanilla in saucepan. Cook over medium heat, stirring constantly until mixture thickens, about 12 minutes. Remove from heat. Add coconut and chopped pecans. Cool until of spreading consistency, beating occasionally. Makes 2½ cups.
