2 lbs haricots verts (tiny green beans), trimmed
6 large shallots, sliced crosswise and separated into rings
vegetable oil
½ c balsamic vinegar
1 Tbsp light brown sugar
3 Tbsp butter
salt and pepper
½ c lightly salted roasted almonds, coarsely chopped
½ c cooked and crumbled bacon (about 5 slices)

Cook beans in boiling salted water to cover 3 to 4 minutes or until crisp tender; drain. Plunge beans into ice water to stop the cooking process; drain. Pour 1 inch of oil in heavy skillet and fry shallots until crisp, 1 to 2 minutes. Remove from skillet with slotted spoon and drain on paper towel. cook vinegar and sugar in another large skillet over medium heat, stirring often, 5 to 6 minutes or until reduced to 3 Tbsp. Stir in butter and saute 5 minutes until thoroughly heated; season with salt and pepper. Arrange beans on serving platter. Top with shallots, almonds, and bacon. Serve immediately.
