2½ to 3 pounds ground beef
2 - 6 ounce cans tomato paste
2 packages spaghetti sauce mix (like McCormick's thick and zesty)
6 lasagna noodles (cooked or special uncooked)
24 ounces cottage cheese
8 ounces grated mozzarella

Directions:
Directions:
Brown hamburger and drain. Add tomato paste, sauce mix and enough water to keep from burning. Simmer 30 minutes. Continue to add water as necessary to keep from burning.

Combine cheeses and parsley.

Grease a large baking dish (9x11 cake pan). Layer, starting with meat sauce, then noodles, cheese. Repeat layers.

Bake at 350º for 30 minutes.

This recipe came from one of Grandma's friends, Ruthie Moorman. I have made it for years, and at one time, it was my "house specialty". Then we found out about all of Dad's allergies. You can make half of a recipe very easily. Also, if you use traditional lasagna noodles, you can layer them uncooked and put in the refrigerator overnight, unbaked. The moisture from the sauce and the cheeses soften the noodles, and there is no need to boil them.
