Spaghetti Sauce Recipe

30 pounds tomatoes
2 1/2 cups oil
3 cups celery, chopped
3 cups onion, chopped
3 cups parsley, chopped
3 cups green peppers, chopped
2 bulbs garlic
3 T black pepper
1 tsp cayenne (optional)
9 bay leaves
3 T salt
1 1/2 tsp cumin
3 tsp oregano
3 tsp thyme
3 tsp rosemary
3 tsp sage
3 tsp sweet basil
6 T chili powder
3 tsp allspice

Combine tomatoes, oil, chopped vegetables and garlic. Cover and cook for 30 minutes. Add rest of ingredients and simmer 2 or more hours. Bottle and water bath to seal 20 minutes for quarts.
