1/2 cup water
3/4 cup brown sugar, packed
1 1/2 cup pineapple chunks, drained (reserve juice)
2 cups CHICKEN MIX
1/4 cup white vinegar
2 cups water
1/2 cup onion, thinly sliced
3/4 cup bell pepper, thinly sliced
5 T conrstarch
1 tsp salt
2 T soy sauce
2 cups chicken broth
2 cups uncooked long-grain rice
2 large tomato wedges

Directions:
Directions:
In a saucepan, combine 1/2 cup water, brown sugar, cornstarch and salt. Stir until smooth. Add reserved pineapple juice. Cook until mixture starts to thicken. Add chicken mix, soy sauce and vinegar. Cover and simmer for 15 minutes, stirring constantly.

Put chicken broth and 2 cups water in a saucepan. Add rice. Cover and cook for 25 minutes.

Spray skillet with cooking spray and saute onion and green pepper until tender crisp. Add pineapple chunks and sauteed vegetables to chicken mixture. Cook until heated. Just before serving add tomato wedges. Serve over hot rice.
