5 medium potatoes, grated
1 medium onion, finely chopped
1.5 tsp salt
1/2 tsp pepper
2 eggs beaten
3/4 cup flour

Directions:
Directions:
1. Grate potatoes and drain. Combine grated potatoes, onion, salt, pepper, and beaten eggs with flour. Mix well.

2. Drop spoonfuls of potato mixture onto well greased hot griddle or skillet to form pancakes about 3 inches in diameter.

3. Cook until golden brown on both sides, turning once, about 5-7 min per side.
