Mushroom Stroganoff Recipe

8 oz pkg of egg noodles
1 Tbsp olive oil
2 Tbsp butter
8 oz sliced mushrooms
2 garlic cloves, pressed
2 fresh thyme sprigs
1 tsp smoked paprika
1 tsp salt
tsp ground black pepper
2 Tbsp all-purpose flour
1 c chicken broth
1 c sour cream
1 Tbsp fresh parsley, chopped

Cook egg noodles according to directions. Remove from heat and cover to keep warm. heat olive oil and 1 Tbsp of butter in large skillet over medium-high heat. Add mushrooms, and cook 5 minutes.Stir in garlic and next 4 ingredients and cook, stirring occasionally, 3 minutes or until mushrooms are slightly browned. Add flour and remaining butter; cook stirring constantly for 2 minutes. Whisk in broth, and bring to a boil, whisking constantly for 5 minutes. Remove from heat. Stir in sour cream and parsley. Serve over noodles.
