Butternut Squash with Gnocchi Recipe

1 butternut squash, washed, peeled, & cut into small cubes
1-2 Portobello mushrooms, washed and sliced
1 c. of chopped kale
2 T. balsamic vinegar
2 T. olive oil
1 clove minced garlic (or more to taste)
salt
optional: shaved Parmesan cheese

Directions:
Directions:
Toss the squash cubes with olive oil and balsamic vinegar and bake in oven until nearly tender and caramelized.
Add Portobello mushrooms and bake for several more minutes, until mushrooms are fork tender.
Saute kale and garlic in additional 1 T. of olive oil and drizzle with additional 1-2 t. Balsamic vinegar.
Add kale to squash and mushrooms. Top with shaved Parmesan cheese if desired.
Serve over gnocchi.
