1 large onion, sliced
2 Tablespoons butter
4 cups chopped potatoes
2 cups water
1 cup celery slices
2 teaspoons salt
1/4 teaspoon pepper
2 cups milk
2 Tablespoons flour
1 (12 ounce) package smoked sausage links, sliced
1/2 pound American Cheese, cubed

Directions:
Directions:
Saute onion in butter. Add potatoes, water, celery and seasonings. Cover; simmer 15 minutes or until vegetables are tender. Gradually add a small amount of milk to flour, stirring until well blended. Gradually add flour mixture to hot vegetables. Add remaining milk and sausage; heat. Add cheese; stir until cheese melts.

Serves 8-10.
