1 pt. Dried Lentils
2 qt. Beef Broth
2 Slices Bacon chopped
1 lg. Onion minced
½ Green Pepper seeded and chopped
1 Clove Garlic crushed
1 Carrot sliced
1 Stalk Celery chopped
2 Ham Hocks
1 Slice Ham diced
1 Pinch oh Thyme
1 Bay Leaf crumbled
¼ C Dry Sherry
Salt andPpepper

Directions:
Directions:
In a soup pot soak lentils in cold water overnight. Pour off the water and add the beef stock to the lentils. In a skillet fry together bacon, ham, onion, green pepper, and garlic. Add the soup pot with lentils. Add ham hocks, carrot, celery, bay leaf, thyme, and salt. Simmer for 2 hours. During the last 10 minutes add Sherry. Continue to simmer 10 more minutes then serve.
