6 boneless skinless chicken breasts
½ cup monterey jack cheese
3 Tbsp diced green chilis
3 Tbsp pimento
30 Ritz crackers (crushed)
½ tsp chili powder
½ tsp cumin
2 Tbsp flour
1 egg
3 Tbsp margarine

Directions:
Directions:
Pound each breast to ¼” thick. Top each with ¼ cup cheese. Combine chilis and pimentos and sprinkle 1 Tbsp mixture on top of cheese. Roll chicken from small end, secure with toothpick if needed. Mix crumbs, cumin, and chili powder. Coat chicken rolls with flour, dip in egg, then roll in crumb mixture. Place in baking dish. Drizzle with margarine. Bake at 350 degrees for 35 to 45 minutes.
