2 lb Monterrey Jack cheese, grated
1 lb Sharp Cheddar cheese, grated
1 small jar chopped pimentos
2 small cans chopped green chilies
8 eggs
½ cup milk
12-16 oz thin sliced ham, chopped

Directions:
Directions:
Mix cheese, chilies, pimentos and ham together.

At this point, you can freeze in 2 8x8 pans or one 11x13 pan.

Beat eggs with milk until fluffy. Salt and pepper to taste. Pour egg mixture over cheese mixture. (If frozen, defrost before adding eggs and milk). Bake at 350 for 50-60 minutes or until golden brown on top. Let casserole set about 10 minutes before cutting.
