2 Cans Black Eyed Peas rinsed and drained
1 Ham Hock
2 pkg Frozen Collard Greens
1 Onion diced
½ lb Bacon (fried until crispy / keep grease)
1 lb Italian Sausage (cooked and drained)
2 Cloves Garlic finely chopped
2 Cartons Chicken Broth
Water

Directions:
Directions:
In a soup pot. Saute' onion and garlic in bacon drippings until soft. add remaining ingredients and enough water to cover. Allow to simmer about 1 hour, Adding water as needed.
