Ingredients: 1 Tbsp olive oil 1 lb boneless skinless chicken breasts, cut into one inch pieces 1 zucchini diced 1 red bell pepper cut into one inch cubes ½ c shredded carrots 1 c snow peas 1 c whole cashews ¾ c chicken broth ¼ c soy sauce 3 cloves garlic, minced 1 Tbsp brown sugar 1 tsp sesame oil 1 Tbsp cornstarch 2 Tbsp water green onions sliced for garnish

Directions:In a medium-sized skillet or wok over medium-high heat add olive oil and chicken. Brown until almost cooked through and add zucchini, bell pepper, carrots, and snow peas. Cook until vegetables tender and chicken is no longer pink. Add cashews. Add chicken broth, soy sauce, garlic, brown sugar, and sesame oil to the pan. In a small bowl whisk together cornstarch and water to make a slurry. Pour into pan and stir until incorporated. Let simmer for 2 minutes or until sauce has thickened. |

Notes: The first vacations I can remember as a kid, were those at Monument Lake in Colorado. The most memorable year, was the one when Jeremy left the tent unzipped and a skunk got into our tent. Luckily dad was able to get it out without fumigating the tent. As an adult we took a family vacation to Monument Lake and once again, Jeremy drew in another animal. This time it was a momma bear that was enjoying the fresh fish and the bacon for breakfast. Jeremy had left his iced chest in the back of the truck and dad had heard the bear scavenging. He shooed the bear away and then she returned with a few cubs to pick up where she left off. Fortunately this time the chest was no longer accessible, so when shooed she returned to the mountains not to be seen again.
