4 pound beef chuck pot roast or london broil, cut 1 1/2 inches thick.
1 tsp grated lemon peel (optional)
1/2 cup lemon juice
1/3 cup vegetable oil
1 onion cut in quarters or eights depending on the size of the onion
4 tsps sugar
1 1/2 tsps salt
1 tsp Worcestershire sauce
1 tsp prepared mustard
1/8 tsp pepper

Place meat in shallow baking dish or gallon size ziplock bag. Combine lemon peel, lemon juice, oil, onion, sugar, salt, Worcestershire sauce, mustard, and pepper, pour over meat. Let stand 3 hours at room temperature or overnight in the refrigerator, turning meat several times. Remove meat from marinade, reserving the marinade. Pat excess moisture from meat with paper towel. Grill over medium heat for 10 to 12 minutes. Turn and cook 10 to 12 minutes more for rare to medium-rare. Heat reserved marinade,. Carve across the grain into thin slices. Spoon marinade over meat.
