CAKE:
1 1/2 cups boiling water
1 cup quick oats
1 cup brown sugar
1 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1 1/2 cups all purpose flour
1/2 tsp salt
1 tsp baking soda
1 tsp vanilla

TOPPING:
1/4 cup melted butter
2/3 cup packed brown sugar
1/2 cup flaked coconut
1/2 cup chopped pecans
3 tbsp light cream

CAKE:
In large bowl, pour boiling water over the oats and let cool. Blend in sugars, oil and eggs, mix well. Add flour, salt, baking soda, and vanilla. Pour into greased and floured 13 x 9 x 2 inch pan. Bake at 350 degrees for 35 - 40 minutes.

TOPPING:
Mix all ingredients together thoroughly. Spread over cake while cake is still warm (I do mine as soon as I take it out of the oven). Place cake back in oven on broil until lightly brown. (Keep an close eye on the cake while it is under the broiler, it will burn pretty fast).

Do yourself a favor and make the cake a day or two before you want to eat it. It is an awesome cake the first day but so much better a day or two later. This is my absolute favorite cake, I always have the ingredients in the house so if I need to take a dish somewhere this is my go to dish. I used to make this cake every year for my birthday.
