2 tbsp. extra-virgin olive oil
1 onion, chopped
1 jalapeño, seeds removed and minced
2 cloves garlic, minced
1 lb. ground beef
1 tsp. chili powder
1 tsp. cumin
1 cup lager
1 cup tomato sauce
2 Tbsp. worcestershire sauce
2 Tbsp. hot sauce
1 cup pepper jack cheese, shredded
1 cup cheddar cheese, shredded
8 medium flour tortillas

Directions:
Directions:
Heat olive oil in a large skillet over medium heat. Add onions and cook until soft, about 5 minutes. Stir in garlic, jalapeño and spices. Cook about 30 seconds. Add the ground beef, stirring to break up the meat. Season with salt and pepper to taste.

Pour in beer and cook for 1 to 2 minutes. Stir in the tomato sauce, Worcestershire and hot sauce. Let simmer for about 10 minutes. Turn off heat and set aside.

Sprinkle about ¼ c each of pepper jack and cheddar over a tortilla. Spread a heaping scoop of the meat mixture on top of the cheese. Sprinkle with ¼ cup more cheese, then top with another tortillas.

Cook in a skillet until golden-brown, about 3 minutes. Flip and cook the other side until golden brown.

Repeat with remaining tortillas.

Slice into wedges and serve with sour cream.
