Chili con Elote (Vegetarian Chili w/Corn) Recipe

3 Tbsp. oil
1 onion, chopped
1 clove garlic, minced
1 green pepper, chopped
2 cups vegetable stock
2 Tbsp. tomato paste
2 cups corn (canned or frozen)
4 cups canned beans (kidney, pinto and/or black)
1 ˝ tsp. salt
1 tsp chili powder
1 tsp. cumin
1 ˝ tsp. oregano
1 ˝ tsp. dried cilantro

Sauté onion and garlic in oil until onion is soft. Add green pepper and sauté 2-3 more minutes. Add stock, tomato paste and corn. Mash 2 cups of the beans and add to the pot along with the remaining whole beans. Add the rest of the seasonings. Cover and simmer for 30 minutes. If it's too watery, remove the cover and cook another 10 minutes.
