2 cups white spelt flour or white cake flour
3/4 cup raw cacao
1 tsp baking soda
1/2 tsp baking powder
1 tsp fine sea salt
1 1/2 cups unrefined white sugar(or reg. white sugar)
1/2 cup plain almond yogurt
1/2 cup avocado oil
1 tsp white vinegar
2 tbsp vanilla extract
1 cup water
1/2 cup day old coffee

Mouse Frosting
3 very ripe avocados
1 can coconut cream
4 cups powdered sugar
1 tbsp vanilla extract
1/2 tsp salt
1/4 raw cacao powder
1/4 tsp xanthan gum

Preheat oven to 350,grease and flour 2 round cake pans. Whisk your dry ingredients. Add all the wet and mix on low speed or by hand just until combined.Pour into prepared pans and cook 20 to 22 min until top is springy .Cool in frig approx 4 hours.While cake is cooling prepare your mouse frosting. Blend avocados in a food processor until smooth .Add all the rest of ingredients .blend till very creamy and smooth. Put in frig to thicken up.Once cake is cooled and frosting is a bit thicker you can frost the cake. Keep in frig for up to a week. Enjoy
