10 large poblano pepper, cut in half, cleaned and seeded
7 - 8 ears of corn, cooked and cut off of the cob
1 14oz. can of tomatoes
4 cloves of garlic
1 onion, chopped
1 lb. chorizo sausage
1 lb. jack cheese
Green Chili Sauce or Salsa Verde.

Cook sausage, add onion. When done, add all other ingredients except the peppers. Stuff peppers with this filling. Smoke at 210º for 3 hours. Cover with green chili sauce and Monterey jack cheese.
