¼ cup olive oil
1 lb. ground italian sausage, sweet or hot (or use italian sausage links and remove the skins)
4-6 cloves garlic, chopped or minced
1 tsp. dried red pepper flakes
1 tsp. dried basil
1 tsp. dried mint flakes
1 (28 oz.) can crushed tomatoes
1 Tbsp. fresh parsley, chopped (or 1 tsp. dried)
salt and pepper to taste

Directions:

Heat olive oil in a large skillet. When it is hot add the ground sausage and start to brown it, stirring to break it up.

When meat is partly browned add the garlic, red pepper, basil and mint. Continue cooking until the meat is completely browned.

Raise the heat and add the canned tomatoes. Let the sauce come to a soft boil. Reduce heat.

Add the salt & pepper, and a pinch more of the red pepper, basil and mint. Add the chopped parsley.

Let the sauce simmer, uncovered, for about 15 minutes. Stir occasionally with a wooden spoon.

You can leave the meat out of this sauce and just make it as a marinara sauce.
