3-4 chicken leg quarters
3 eggs
Add just as much water as you have with the eggs
1 tsp salt

Boil/Simmer 3-4 chicken leg quarters covered in water until chick is tender.
Remove chick from pot and set aside to cool.

WHILE CHICKEN IS COOLING, MAKE HOMEMADE NOODLES

Crack 3 eggs into measuring cup, beat.
Add as much water as you have egg. Pour in medium size bowl and beat together.
Add 1 tsp of salt and enough fkour to make a stiff dough (about 3 cups-approx. 1 cup per egg.
Roll thin on floured surface (let stand 20 minutes if you have time).
Slice into ¼ strips. Drop noodles into boiling broth.
Debone cooled chicken and add to a pot.
Simmer all for about 30 minutes.
(which will soak up all the broth)

SHOULD BE CREAMY, NOT WATERY.
