3 eggs
1 c. granulated sugar
2 c. zucchini or 1 c. zucchini and 1 c. carrot
1 tsp. vanilla
1/2 tsp. cinnamon
1 tsp. baking powder
1 c. chopped nuts
1 c. brown sugar
1 c. vegetable oil
3 c. all purpose flour
1/4 tsp. nutmeg
1/4 tsp. cloves
1 tsp. soda
1 tsp. salt

Directions:
Directions:
Heat oven to 350 degrees. Beat eggs until frothy. Stir in sugars, oil, zucchini, carrot and vanilla. Combine dry ingredients, stir in zucchini/carrot mixture. Stir in nuts. Pour into two well greased pans. Remove to rack. Cool thoroughly before slicing.
