½ cup sugar
1 tsp. salt
½ tsp. vanilla extract
1 cup half-and-half
¼ cup buttermilk
2 Tbsp. shortening, melted
3 Tbsp. unsalted butter, melted
1 ⅔ cups flour
¼ tsp. baking soda

Directions:
Directions:
Combine the egg, sugar, salt and vanilla in large bowl with an electric mixer on high speed for 1 minute.

Add the half-and-half, buttermilk, shortening, and butter and mix well.

In a separate medium bowl, combine the flour and the baking soda. Add the flour mixture to the wet mixture and mix well with the electric mixer. Cover and chill the batter (overnight for best results, but it can also be used right away).

When you are ready to make the waffles, preheat a waffle iron and spray with nonstick cooking spray. Spoon ⅓ - ½ cup of batter onto the center of the waffle iron.

Cook the waffles for 2 to 3 minutes or until golden brown.
