5-6 cans Bush's Northern Beans
4 cups cooked chicken (approx. 4 breasts)
1 tsp. olive oil
2 medium onions
4 garlic cloves, minced
(2) 4 oz. cans chopped green chilies
2 tsp. cumin
tsp. cayenne pepper
1 tsp. oregano
1 can chicken broth
3 cups grated monterey jack cheese
Sour cream
Tortilla chips

Cook chicken until tender, cut into cubes and set aside. Heat oil in a large stock pot and add onions; saute until translucent. Stir in garlic, chilies, cumin, oregano and pepper; saute for 2 minutes. Add chicken, beans and broth and bring to a boil. Reduce heat and simmer until all is hot. Add cheese and stir until melted. Serve topped with sour cream and tortilla chips (both are optional).
