1 lb hamburger
½ package taco seasoning (I prefer Chi Chi's brand)
½ c onion, chopped
½ green pepper, chopped
1 garlic clove, minced
1 can pinto beans
1 can green enchilada sauce
8 oz tomato sauce
4 slices American cheese
tortillas
1 bag monterey jack and colby cheese, shredded
cheddar cheese, shredded

Directions:

Brown hamburger with onions, green peppers, and garlic; drain. Drain pinto beans and add to hamburger mixture along with taco seasoning. Heat through. Mix about 4 oz of green enchilada sauce with 6 oz of tomato sauce and set aside. The remaining 2 oz of tomato sauce add to hamburger mixture. Put about ⅛ of the mixture into a tortilla, with ½ of American cheese. Roll and place into a greased 9 in x 13 in baking dish. (you can prep the dish with a few tablespoons of the sauce and 3-4 tablespoons of water.) Continue until all prepared. Pour about half of the tomato/enchilada sauce mixture on the enchiladas, sprinkle liberally with monterey jack and colby cheese. Pour remainder of sauce on the cheese. Cover with aluminum foil and bake for 30 minutes at 350º. Remove from oven and sprinkle with cheddar cheese. Recover with foil and bake for an additional 15-20 minutes. Remove foil, and let cook uncovered for about 5-10 minutes.
