1 cup long-grain white rice
4 small chicken legs, split
kosher salt and pepper
1/4 cup hoisin sauce
1 lb snow peas
2 tsp olive oil
1/2 tsp crushed red pepper flakes
1/4 cup fresh cilantro roughly chopped

Directions:
Directions:
1) Heat oven to 450F. Cook rice per package directions.

2) On a rimmed baking sheet lined with nonstick foil, season chicken with 1/4 tsp each salt and pepper and roast for 15 minutes.

3) Brush chicken with hoisin sauce and return to oven. On a second rimmed baking sheet, toss snow peas with oil, crushed red pepper, and 1/4 tsp salt. Roast until chicken is cooked through and snow peas are beginning to char, 5 to 7 minutes more. Serve over rice and sprinkle with cilantro.
