4 big potatoes
2 T extra virgin olive oil
salt and pepper

Directions:
Directions:
Boil the potatoes in the skin the previous day until fork tender.

Peel the potatoes and shred them. In a big bowl mix the shredded potatoes with the salt, peper and olive oil.

Heat a nonstick skillet add the potatoes and start cooking on medium heat tossing once in a while, after about 15 minutes press them into the skillet and cover them with a plate. let cook til crusty on the bottom then flip the potatoes over and cook the other side till crusty. Remove on to a serving plate.
