4 4 oz filet of salmon
1 fennel bulb sliced thinly
1 big potato sliced thinly
1 tomato
1 T chopped parsley or dill
2 T extra virgin olive oil
¼ cup white wine
salt and pepper
4 pieces of parchment paper 12x16

Directions:
Directions:
Fold the parchment paper in half.

Microwave the fennel and potatoes till half cooked.

Place the fennel on on hte folded line of the parchment paper salt and pepper. Place the salmon filet on top salt and pepper. Add the potato slices salt and pepper, top with chopped tomatoes and salt and pepper. Drizzle everything with the olive oil and white wine. Sprinkle with the chopped parsley.

Close the package thightly and bake in a 400 F 200C oven for 20 - 25 minutes.

Remove and open the packages and serve.
