1 lb. fully cooked pork roast (or butt)
May substitute rotisserie chicken
6 tostada shells (or chips)
3/4 cup salsa-with-queso dip
1 (15 oz) can black beans, drained and rinsed
1 ½ cups shredded lettuce
1 cup fresh diced tomatoes
¼ teaspoon chipotle pepper sauce, optional

Directions:
Directions:
Preheat oven to 350º. Shred pork or chicken with two forks. Drain and rinse beans.

Arrange shells (or chips) on baking sheet or oven-proof platter. Place 2 tablespoons salsa-with-queso dip in center of each shell, top with even amounts of beans and pork or chicken. Bake 5-7 minutes or until queso melts and tostadas are crispy.

Top with lettuce, tomatoes and pepper sauce.

Serve with sour cream, guacamole and tomato salsa.
