1 cup besan
¼ tsp chili powder
2 tsp minced small green chilies (optional)
⅓ tsp tumeric powder
¼ cup chopped cilantro leaves
⅛ tsp garam masala
½ cup water
1 ½ cup mix vegetables (potato, cauliflower, onion, frozen mixed veggies or cubed fresh)

oil for frying

In a bowl mix besan and dry ingredients.

Add water slowly and continue stirring so that the batter is smooth and free of lumps. Use hand mixer for 2 mins.

Heat the oil in a Karhai or wok. Test the oil by dropping in just one onion or veg. It will rise immediately, then the oil is ready.

Mix the batter and vegetables. Drop the batter by the tsp into the oil and fry until pakoras are golden brown.

Remove with a slotted spoon and place in an oven proof dish lined with paper towel.

Keep warm and serve with a dipping sauce.
