small eggplants - 6
finely chopped onion - 2 Tbsp
Salt - 1/2 tsp
Red chilli powder - 1/4 tsp
Dhania Powder - 2 Tbsp
Amchoor - 1/4 rsp
Groung roasted Jeera - 1/4 rsp
Achar masala - 1/2 tsp

Preheat oven at 450. Wash and dry the eggplants. slice them vertically in the center but do not separate to maintain the shape.
Mix all the spices and onion. Stuff the eggplants with the spice mix and set them on a baking dish.
Bake for 30-45 minutes until tender.

Growing up I never liked eggplants. The first time I tried stuffed eggplants was at a friend's house as an adult thinking if I don't like it I will never ever try eggplants again. But the eggplant had achari flavor that was just out of this world. Since then this dish became my favorite.
