16 saltine crackers
1 teaspoon vanilla
1 cup chopped pecans
Cool whip
small frozen sweetened strawberries

Directions:
Beat 3 egg whites adding cream of tartar and sugar. Beat until holds shape. Crush saltine crackers. Fold crackers, vanilla and pecans into whipped egg whites.
Pour into pie plate. No crust. Or you can spread mixture on parchment paper making small 3 inch circles with mixture, making raised edge on circles (like a small crust edge). Bake at 300º for 20 minutes.
Just before serving, spread cool whip on top and place sweetened strawberries on top of pie. Cut and serve. Refrigerate any leftovers. This was Keith's favorite pie.
