1/2 teaspoon vanilla
3 large eggs
1/4 teaspoon baking soda
1/2 cup nonfat Greek yogurt
1-1/2 cups organic cane sugar or 3/4 cup Sweetleaf baking blend
1/2 cup butter, room temperature
1/2 cup coconut oil
1-1/2 cups all-purpose gluten free flour (Use Jules or Arrowhead Mills)

Preheat oven to 350º.
In large mixing bowl, cream the butter, coconut oil an sugar together. Add the yogurt and mix until incorporated. Sift the baking soda and flour together. Add to the creamed mixture alternating with eggs, beating in each egg one at a time. Add vanilla.

Pour mixture into a greased and floured loaf pan. Bake for 40 minutes to one hour or until toothpick inserted into the center of the cake comes out clean.
