3 eggs
⅔ c pumpkin
c flour
2 tsp cinnamon
tsp nutmeg
1 c sugar
1 tsp lemon juice
1 tsp baking powder
1 tsp ginger
1 tsp salt

1 c powdered sugar
tsp vanilla
4 Tbsp butter
6 oz cream cheese

Beat eggs on high for 5 minutes gradually beating in sugar. Stir in pumpkin, lemon juice. Stir together; flour, baking powder, cinnamon, ginger, nutmeg, and salt. Fold this into pumpkin mixture. Spread into greased and floured 15 in x 10 in x 1 in pan. Top with finely chopped nuts. Bake at 375 for 15 minutes. Turn out onto cloth sprinkled with powdered sugar. Roll towel and cake together. Cool, unroll.

Spread filling on unrolled cake. Roll cake. Freezes well.
