Ingredients:

2 chicken breasts (or any meat on hand) cooked and cubed
2 oz ghee (or oil substitute)
2 green onions ( reserve green tips of green onions for garnish)
1/4 large carrot
1 stalk celery
1 clove garlic
4 oz cauliflower rice
1 Tbsp soy sauce
1 tsp sesame oil
2 eggs beaten
1 tbsp whipping cream

Directions:

Fry chicken with 1 tbsp ghee until cooked. Put aside to rest.
Fry celery, garlic, carrot and white part of onion with another tbsp of ghee,
Add all but one tbsp ghee into pan and put in cauliflower rice to brown a little.
Mix 2 eggs with 1tbsp of whipping cream.
Push mixture to one side of the pan, and put eggs on other side to cook, stir to make scrambled eggs. once cooked, add chicken and mix together.
Serve with green onions overtop and pour soy sauce overtop

(DO NOT ADD SOY SAUCE WHILE COOKING!) Soy sauce is extremely high in carbs for its serving size so you need to maximize it as far as possible hence why I only add it when ready to eat.

I make this on a weekly basis since it is so yummy and healthy. It is also extremely customizable. If you have the carbs free, add a few peas too.
