1 tablespoon olive oil
4 boneless, skinless chicken breasts
¼ teaspoon salt
⅛ teaspoon black pepper

8 slices bacon, cooked crisp and crumbled

1 head romaine lettuce, cut into ½-inch pieces
2 avocados, cut into ½-inch dice
3 medium tomatoes, seeded and cut into ½-inch dice
1 cup crumbled blue cheese

In a large frying pan over medium heat, heat oil. Season chicken with salt and pepper and cook for 5 minutes. Turn and cook for about 4 minutes or until browned and just done. Let cool. Cut into ½-inch chunks.

In a large salad bowl, spread lettuce in an even layer. Arrange bacon in a strip on one side of bowl, followed by strips of chicken, avocado, tomato, and cheese. Gently toss salad with vinaigrette.

¾ teaspoon Dijon Mustard
2 shallots, minced
1 garlic clove, minced
2 tablespoons chopped flat-leaf parsley
¾ teaspoon thyme, crushed
¾ teaspoon salt
¾ teaspoon black pepper

½ cup olive oil

In a small bowl, whisk together all ingredients, except oil. Slowly add oil while whisking.
