Queso Flameado Recipe

1 pound hot breakfast sausage or chorizo*

¼ cup diced onion
¼ cup diced poblano pepper or 1 (4-ounce) can chopped mild green chiles
¼ cup sliced mushrooms (opt)

4 tablespoons chopped fresh cilantro, divided
¼ teaspoon hot pepper sauce, like Tabasco
¼ cup diced tomato (opt)
2½ cups Taco-Blend shredded cheese

12 (6-inch) flour or corn tortillas

Directions:
In a large skillet over medium-high heat, saute sausage for about 5 minutes, breaking up clumps with back of a spoon. Add onion, poblano, and mushrooms; saute for about 2 minutes or until sausage is brown. Remove sausage mixture and drain; place in an 8-inch baking dish. Mix in diced tomato, 3 tablespoons of cilantro, and hot sauce. Sprinkle with cheese, and remaining cilantro. Bake at 350F for 10 minutes.

Wrap tortillas in foil and heat them in oven along with the flameado. Continue to bake until cheese bubbles and flameado is heated through, about 10 minutes longer. Spoon mixture into warm tortillas.

*substitute sage breakfast sausage and use pepper-jack cheese
