4 medium potatoes, chip sliced
¼ c butter
1 medium onion, diced
pepper to taste

Directions:
Directions:
Slice potatoes in chip slices, dice onion, layer ½ onion, ½ potato, dot with 4-5 pats of butter. Repeat again with potato, onion, butter. Bake at 350º for 1 hour in casserole dish. "It's simple, but I like it."

Shirley remembers sitting at the table eating a baked potato. She had just finished the potato and was gobbling down the skin. Granddad said, "you don't need to eat the skin." Shirley replied, "but I like them." Granddad said, "oh well I feed them to the hogs."
