Directions:1. Turn on Jack Johnson's 'In Between Dreams' album to set a chill mood. 2. Make some delicious mimosas; or skip the OJ and just enjoy the bubbles straight up - I won't judge you. 3. Combine flour, white sugar, baking powder, and salt. In a separate bowl, mix together the egg, milk, vegetable oil, and bananas. 4. Stir flour-mixture into banana-mixture; batter will be slightly lumpy. 3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake. Cook until pancakes are golden brown on both sides. 4. Serve hot. 5. Drown the pancakes in your finest Canadian maple syrup; also, top with your favourite berries - blueberries, strawberries, raspberries, blackberries... |

Notes: My personal notes are mostly in the directions. I chose Jack Johnson's album because of the song that is appropriately named for this recipe, as well as the other songs always being easy on the ears. These pancakes are best saved for chilly, relaxing mornings where you aren't sure if you want a coffee or a mimosa. Don't think too much, just have both. And these pancakes. There, I made your decision for you. Extra: if you like peanut butter, you can add 1/4 cup of smooth peanut butter to the banana-mixture bowl.
