Basic Recipe:
4 cups old fashioned oats
2 cups sliced almonds
3/4 cup honey
1/2 cup oil
2 teaspoons vanilla

Variations:
Add dried fruit the last 5 minutes in oven (dried cranberries are great)
Substitute maple syrup or blue agave for the honey
Add ginger or cinnamon or cocoa powder

Preheat oven to 350º

Mix together the liquid ingredients and set aside.

Put oat in large glass bowl. Microwave 2 minutes, stir, microwave another 2 minutes.
Add almonds on top of oats, microwave 2 minutes. Stir. Add liquids. Spread on large rimmed cookie sheet. Bake 20 minutes, stir and bake another 10 minutes.

Note: This recipe is fairly forgiving, you can do just about anything you want to make it your own. The only thing I always do is use the 4 cups of oats and at least one cup of sliced almonds. The are always microwaved to toast them slightly before adding liquid.
