2 eggs
1/2 t salt
1T sugar
1/3 c flour
1/2 c milk
1 t oil
Double for two people

Directions:
Directions:
Beat eggs, salt and sugar. Add flour and milk and beat until smooth. This can be done in a blender.
Heat oil in deep skillet. Pour in all of batter.
Cook two minutes on top of stove, then place skillet in a preheated 450º oven.
Bake 15 minutes until puffed and brown.
Serve either the traditional way with melted butter, lemon juice and powdered sugar, or my favorite, with real maple syrup and powdered sugar.

You can add apple slices before pouring in batter. Sprinkle brown sugar on the apples.
Pour in batter and proceed as above.
