Need fresh black-eye peas for New Years (can get dried but fresh is best)
Ham Hock (Hog Jaw) or salt pork can be used
Salt and pepper to taste
1 tablespoon of sugar
1 can of Rotel
Parsley Flakes

Directions:
Directions:
Rinse black-eye peas
Add rest of ingredients in large pot
Bring to a boil and then turn down to med heat

Start these on New Years Eve (afternoon) - have spoon at midnight
Turn burner off at night and reheat for New Years Day
