Easy Lemon Bars Recipe

1 (18 ounce) package Pillsbury Refrigerated Sugar Cookie dough
4 eggs, slightly beaten
1-1/2 cups sugar
1/4 cup flour
1 teaspoon baking powder
1/3 cup lemon juice
2 teaspoons grated lemon peel
1 - 2 Tablespoons powdered sugar

Heat oven to 350. Line 13X9 pan with heavy duty aluminum foil.

Press cookie dough evenly in bottom of foil-lined pan. To prevent messy fingers, place a sheet of plastic wrap over dough; press evenly into pan. Bake at 350 for 18-20 minutes or until light golden brown.

Meanwhile, in large bowl, combine eggs, sugar, flour and baking powder; blend well. Stir in lemon juice and lemon peel.

Remove pan from oven. Pour mixture over warm crust.

Return to oven; bake for an additional 20-25 minutes or until top is light golden brown. Cool completely. Use foil to lift from pan; cut into bars. For easy cutting, dip knife in hot water. Sprinkle bars with powdered sugar.

Makes 36 bars.
