Fine Sooji/Rava-1/2 Cup
Water- 1 ½ Cup
Oil- To shallow fry and greasing
Potato- 1 Big
Green chili- 2 or according to taste
Cumin seed-1 tsp.
Salt- 1tsp. or according to taste
Chat masala- 1 tsp.
Red Chili Flakes – 1 tsp.
Turmeric Powder – ½ tsp.
Ginger paste – ½ tsp.
Chopped Coriander Leaves – 2 tbsp.
Corn Flour – 2 tbsp.

Put the pan on gas and light roast Sooji for 5 mins. (Low to medium flame) Don’t make it brown.

After 5 mins. of roasting add 1.5 cup of water and cook in the low flame. At this stage add 1 tbsp. oil that will give a nice texture to it and make it smooth. Cover the pan for 3-4 mins. on low flame to cook.

Now take a big boiled potato and grate it in a bowl. By this time Sooji is also cooked and the consistency will be thick like dough. After cooling down add it to grated potato.

Add all the ingredients in it (chopped green chili, cumin seed, salt, chat masala, Red Chili Flakes. Turmeric Powder, Corn Flour, Ginger paste, and chopped Coriander leaf).

With the greased hand mix it well and make a perfect dough. Corn Flour will help it in binding and add crispiness to the cake. Now on the greased high end tray spread the dough evenly (1/2 inch thick) with the help of spatula.

Now put the tray in the fridge for 30 mins. to set. Take out the tray, cut it in 2 to 3 inches of square pieces and shallow fry them to golden brown in the medium flame.

Serve these cakes with Coriander chutney or ketchup.

Note - You can prepare beforehand in the morning for your evening party.
