1⅓ lb whole chicken breasts
2 tsp corn starch
1 tsp grated ginger root
½ tsp salt
½ tsp crushed red pepper
2 medium onions sliced into ¾ in pieces
4 green onions sliced in 1 in lengths
3 Tbsp soy sauce
2 Tbsp dry sherry
1 tsp sugar
2 Tbsp cooking oil
1 c cashews or walnuts

Skin chicken and cut into 1 in pieces. Set aside. In a small bowl stir soy sauce into corn starch; stir in dry sherry, ginger root, sugar, salt, and red pepper. Set aside. Preheat skillet or wok over high heat; adding oil Stir fry green peppers and green onions in hot oil for 2 minutes. Remove from skillet, add nuts. Stir fry for 2 minutes. Return all chicken to skillet and stir soy mixture into chicken. Cook and stir until thickened and bubbly. Stir in vegetables and cashews; cover and cook 1 minute more. Serve with steamed rice.
