1¼ cups buttermilk
¼ cup olive oil
3 tbsp. hot pepper sauce
2 tbsp. Dijon mustard
2 garlic cloves minced
2 tsp. salt
½ tsp. ground black pepper
1 large onion, sliced
12 chicken pieces

1 cup dry unseasoned breadcrumbs
⅓ cup freshly grated Parmesan cheese
¼ cup flour
2 tsp. dried thyme
½ tsp. cayenne pepper

3 tbls melted butter

Mix buttermilk, oil, hot pepper sauce, mustard, garlic, salt, pepper and onion in large bowl. Add chicken and marinate for a least 4 hours. Can be done the day before or the morning of cooking.

Place racks on 2 large rimmed baking sheets. Whisk breadcrumbs, cheese, flour, thyme and cayenne pepper. Remove chicken from marinade allowing excess to drip off. Coat with breadcrumb mixture and place on baking sheets.

Preheat oven to 425º. Drizzle butter over chicken and bake until golden and cooked through, about 50 minutes.
