1 large or several smaller zucchini (about 5 lb. worth...total)
4 large onions
1 green pepper
1 red pepper
½ cup salt
3 cups sugar
2 ½ cups vinegar (apple cider)
2 teaspoons turmeric
2 teaspoons celery seed

Directions:
Directions:
Grind zucchini, onions and peppers. Cover with water, to which salt has been added... Let stand 1 hour...
Drain and rinse under cold, running water in colander. Set aside.
In saucepan, boil sugar, vinegar, 1 cup water and spices for 3 minutes. Add rinsed vegetables...(after pressing out all the water you can..in the colander...) .and cook over low heat about 15 minutes ...While hot, fill canning jars and seal......or cool and just put in the refrigerator for use. You might want to can some and store some in fridge...It makes a good amount of relish.

Dave and, Dan liked to help make this relish every summer, in their childhood years. No food processor then...just a hand-grinder clamped to the table...We did it together. Zucchini always flourished in the garden....so we did lots of it..Jim & Cherry were too little to help...at the time...
