1 3.4-ounce box pistachio pudding
1 20-ounce can crushed pineapple with juice
1 cup mini marshmallows, or more if desired
1 8-ounce Cool Whip
1/2 cup chopped pecans, (toasted is best)
Directions:
Directions:
Mix dry pudding with pineapple. Add marshmallows and nuts. Fold in Cool Whip. Add enough Cool Whip so that mixture is fluffy and light green. Refrigerate.

To toast pecans: Preheat oven to 350º Spread pecans in a single layer and bake 8-10 minutes until fragrant. Cool.
